Happy Monday All,

Well, are you all thawed out yet? It seems this past week the East Coast was nothing but frigid temperatures and tons of snow. We got over 12 inches and it seemed to not stop falling. I found a dish to help you take the chill out of January. How about a big bowl of stew! Nothing like stew to warm you up on those chilly January days. Now, if you are on the West Coast this is still a great dish to try out as well. This dish offers a nice twist on stews and also help stretch your dollar at the table. Just add the meat and a few basic vegetables for an easy, satisfying dish.



Kielbasa Skillet Stew



PREP TIME 20 Min
COOK TIME 45 Min
READY IN 1 Hr 5 Min

INGREDIENTS :

5 bacon strips


1 medium onion, chopped


1 pound smoked kielbasa sausage, thinly sliced


2 (15.5 ounce) cans great Northern beans, undrained


2 (8 ounce) cans tomato sauce


1 (4 ounce) can chopped green chilies


2 medium carrots, thinly sliced


1/2 medium green pepper, chopped


1/2 teaspoon Italian seasoning


1/2 teaspoon dried thyme

1/8 teaspoon pepper




DIRECTIONS:



In a 12-in. skillet, cook bacon until crisp; remove to paper towel to drain.
In drippings, cook onion and sausage until the onion is tender; drain.
Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 45 minutes or until vegetables are tender, stirring occasionally. Crumble bacon and sprinkle on top.
